Ingredients for Dressing:
- 1 can (15oz) organic chickpeas (drained and rinsed)
- 1 organic avocado (diced)
- 1 cup organic cauliflower florets (lightly steamed or roasted)
- 4 cups organic mixed greens
- 1 cup organic cherry tomatoes (halved)
- 1/2 organic red onion (thinly sliced)
- 1/4 cup organic parsley (chopped)
For the Lemon-Tahini Dressing:
- 1/4 cup organic tahini
- 2 tbsps fresh organic lemon juice
- 1 tbsp organic olive oil
- 1 tbsp organic maple syrup or honey
- 1 clove organicgarlic (minced)
- Seasalt and freshly ground black pepper to taste
- Water to thin (as needed)
