Ingredients
  

Ingredients for Dressing:

  • 1 can (15oz) organic chickpeas (drained and rinsed)
  • 1 organic avocado (diced)
  • 1 cup organic cauliflower florets (lightly steamed or roasted)
  • 4 cups organic mixed greens
  • 1 cup organic cherry tomatoes (halved)
  • 1/2 organic red onion (thinly sliced)
  • 1/4 cup organic parsley (chopped)

For the Lemon-Tahini Dressing:

  • 1/4 cup organic tahini
  • 2 tbsps fresh organic lemon juice
  • 1 tbsp organic olive oil
  • 1 tbsp organic maple syrup or honey
  • 1 clove organicgarlic (minced)
  • Seasalt and freshly ground black pepper to taste
  • Water to thin (as needed)

Instructions
 

1. Prepare the Dressing:

  • In a small bowl, whisk together the tahini, lemon juice, olive oil, maple syrup (or honey), minced garlic, sea salt, and black pepper.
  • Add water, a little at a time, until the dressing reaches your desired consistency.

2.  Prepare the Salad:

  • In a large salad bowl, combine the mixed greens, chickpeas, avocado, cauliflower florets, cherry tomatoes, red onion, and parsley.

3. Assemble and Serve:

  • Drizzle the lemon-tahini dressing over the salad and toss gently to combine.
  • Serve immediately and enjoy this fresh, nutritious salad.
