Ingredients
  

  • 1 whole-grain baguette (cut into 4 equal pieces)
  • 8 ounces organic roast beef (thinly sliced)
  • 1 cup organic alfalfa sprouts
  • 1 organic cucumber (sliced)
  • 1 organic tomato (sliced)
  • 4 leaves organic lettuce
  • 1/2 cup organic Greek yogurt
  • 1 tbsp organic Dijon mustard
  • 1 tbsp organic lemon juice
  • Sea salt and freshly ground black pepper to taste

Instructions
 

Prepare the Yogurt Spread:

  • In a small bowl, mix the Greek yogurt, Dijon mustard, lemon juice, seasalt, and black pepper until well combined.

Assemble the Sandwich:

  • Slice each piece of the baguette in half lengthwise.
  • Spread a generous amount of the yogurt mixture on the cut sides of each baguette piece.
  • Layer the lettuce, tomato slices, cucumber slices, roast beef, and alfalfa sprouts onthe bottom half of each baguette piece.
  • Place the top half of the baguette over the filling.

Serve:
