Ingredients
  

  • 2 cups organic coconut milk (full-fat)
  • 1/4 cup organic maple syrup or honey
  • 1 tsp organic vanilla extract
  • 1 cup organic dark chocolate chips
  • 2 tbsp organic coconut oil
  • 1/2 cup organic pistachios (chopped)

Instructions
 

Preparethe Coconut Ice Cream Base:

  • In a mixing bowl, combine the coconut milk, maple syrup (or honey), and vanilla extract. Stir until well mixed.
  • Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  • Insert popsicle sticks and freeze for at least 4 hours or until fully set.

Prepare the Chocolate Coating:

  • In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until completely melted and smooth.
  • Allow the chocolate mixture to cool slightly.

Assemble the Popsicles:

  • Once the popsicles are fully frozen, remove them from the molds.
  • Dip each popsicle into the melted chocolate, allowing any excess to drip off.
  • Quickly sprinkle or dip the chocolate-coated popsicles into the chopped pistachios.
  • Place the popsicles on a parchment-lined baking sheet and return to the freezer for 10-15 minutes to set.
