Crust:
- 1 cup organic almonds or almond flour
- 1/2 cup organic Medjool dates pitted
- 1/4 cup organic coconut oil melted
Filling:
- 2 cups organic Greek yogurt full-fat for a creamier texture
- 1 cup organic cottage cheese
- 1/2 cup organic vanilla protein powder
- 1/4 cup organic chia seeds
- 1/4 cup organic maple syrup or honey
- 1 tablespoon organic vanilla extract
- 1 tablespoon organic lemon juice
- 2 teaspoons organic lemon zest
Topping:
- 1 cup organic raspberries
- 1/4 cup organic pistachios chopped
- 1 tablespoon organic honey optional, for drizzling
Prepare the Crust:
In a food processor, pulse the almonds until they are finely ground. If using almond flour, skip this step.
Add the Medjool dates and melted coconut oil to the food processor and blend until the mixture sticks together.
Press the crust mixture into the bottom of a springform pan, ensuring it’s evenly spread and compact. Place the pan in the freezer while you prepare the filling.
Prepare the Filling:
In a large mixing bowl, combine the Greek yogurt, cottage cheese, vanilla protein powder, chia seeds, maple syrup (or honey), vanilla extract, lemon juice, and lemon zest.
