Ingredients
  

Crust:

  • 1 cup organic almonds or almond flour
  • 1/2 cup organic Medjool dates pitted
  • 1/4 cup organic coconut oil melted

Filling:

  • 2 cups organic Greek yogurt full-fat for a creamier texture
  • 1 cup organic cottage cheese
  • 1/2 cup organic vanilla protein powder
  • 1/4 cup organic chia seeds
  • 1/4 cup organic maple syrup or honey
  • 1 tablespoon organic vanilla extract
  • 1 tablespoon organic lemon juice
  • 2 teaspoons organic lemon zest

Topping:

  • 1 cup organic raspberries
  • 1/4 cup organic pistachios chopped
  • 1 tablespoon organic honey optional, for drizzling

Instructions
 

Prepare the Crust:

  • In a food processor, pulse the almonds until they are finely ground. If using almond flour, skip this step.
  • Add the Medjool dates and melted coconut oil to the food processor and blend until the mixture sticks together.
  • Press the crust mixture into the bottom of a springform pan, ensuring it’s evenly spread and compact. Place the pan in the freezer while you prepare the filling.

Prepare the Filling:

  • In a large mixing bowl, combine the Greek yogurt, cottage cheese, vanilla protein powder, chia seeds, maple syrup (or honey), vanilla extract, lemon juice, and lemon zest.
  • Use a hand mixer or blender to blend the filling ingredients until smooth and creamy.
  • Pour the filling over the crust in the springform pan, spreading it out evenly.

Set the Cheesecake:

  • Cover the cheesecake with plastic wrap or a lid and refrigerate for at least 4 hours or overnight to allow it to set properly.

Add Toppings:

  • Before serving, remove the cheesecake from the springform pan and place it on a serving plate.
  • Top the cheesecake with fresh raspberries and chopped pistachios.
  • Drizzle with honey if desired for extra sweetness.
