Ingredients
  

1 cup fresh organic strawberries, hulled

1 cup fresh organic sourcherries, pitted

1 cup fresh organic blueberries

1 cup mixed organic berries (blackberries, raspberries, etc.)

1 can (14 oz) full-fat coconut milk

1/2 cup monk fruit sweetener (or less - to taste)

1 tsp vanilla extract

Pinch of sea salt

Instructions
 

Prep the Berries:

  • In a blender, combine the strawberries, sour cherries, blueberries, and mixed berries. Blend until smooth.

Mix the Base:

  • Add the coconut milk, monkfruit sweetener, vanilla extract, and a pinch of sea salt to the berry mixture. Blend again until all ingredients are well combined.

Chill:

  • Pour the mixture into a freezer-safe container. Cover and freeze for at least 4 hours, or until firm. For a creamier texture, stir the mixture every 30 minutes for the first 2 hours.

Serve:

  • Scoop the ice cream into bowls and enjoy immediately. Optionally, top with fresh berries or a drizzle of honey (for non-vegans).

Notes

  • Customization: Feel free to swap any of the berries with your favorites or add a handful of dark chocolate chips for an extra treat.
  • Storage: Store the ice cream in an airtight container in the freezer for up to 2 weeks. Let it sit at room temperature for a few minutes before scooping if it becomes too hard.
  • Smooth Texture: For an even smoother texture, you can churn the mixture in an ice cream maker before freezing.
