  • 1 whole organic chicken about 4-5 pounds
  • 3 organic blood oranges 2 sliced, 1 juiced
  • 4 cloves organic garlic minced
  • 1/4 cup organic extra virgin olive oil
  • 1 tablespoon organic fresh rosemary chopped
  • 1 tablespoon organic fresh thyme chopped
  • 1 teaspoon organic paprika
  • Sea salt and freshly ground black pepper to taste
  • 1 organic lemon sliced
  • 1 medium organic onion sliced
  • 2-3 sprigs of organic rosemary for stuffing

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Chicken: Rinse the chicken under cold water and pat it dry with paper towels. Place it in a roasting pan.
  • Season the Chicken: In a small bowl, combine the minced garlic, olive oil, chopped rosemary, thyme, paprika, and the juice of one blood orange. Rub this mixture all over the chicken, making sure to coat it evenly, including under the skin.
  • Stuff the Chicken: Stuff the cavity of the chicken with the lemon slices, onion, and rosemary sprigs. Arrange the blood orange slices around and on top of the chicken.
  • Roast the Chicken: Roast the chicken in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  • Rest and Serve: Let the chicken rest for 10 minutes before carving. Serve with the roasted blood oranges and a sprinkle of fresh herbs if desired.
